Stuffed Chicken Supreme
INGREDIENTS:
6 x chicken breasts
1 x bunch spinach
25g Sun-dried tomatoes
50g Mozzarella cheese
Olive Oil
SPICES:
2 tsp salt
2 tsp BBQ spice
2 tsp Cajun spice
2 tsp garlic powder
(mix all the above together to create the seasoning rub)
METHOD:
- Heat olive oil in a pan
- Season the chicken with the spices as desired and seal in a little olive oil in a pan
- Wash and de-vein the spinach
- Cook spinach in boiling water with a little salt until just cooked
- Strain the spinach and put in a bowl with iced water to cool down
- Squeeze as much water out of the spinach as possible and chop roughly
- Grate Mozzarella and chop the sun-dried tomatoes
- Mix the spinach, Mozzarella and sun-dried tomatoes together
- Take the chicken and make a cut at the top of the breast to create a pocket to hold the stuffing
- Place the mix of spinach, Mozzarella and sun-dried tomatoes into the pocket
- Close the pocket with a toothpick (if required) once filled
- Place chicken on a slightly greased baking tray
- Bake in a pre-heated oven at 180 degrees C for approximately 2-25 minutes (or until tender)
Serve on roasted butternut with roast potatoes (or rice if preferred) and a sauce / gravy of your choice.
