Brian’s cheeses and bacon muffin
INGREDIENTS:
4 tablespoons butter
90g chopped bacon (or more if you wish)
200g cake flour
Pinch of salt
1 tablespoon of caster sugar
2 teaspoons baking powder
2 tablespoons of fresh chopped parsley
2 chopped spring onions
50g grated cheddar cheese
2 tablespoons Parmesan cheese
2 eggs
200ml milk
METHOD:
- Melt butter and cook bacon until golden brown
- Remove from the heat and add chopped parsley, salt and spring onions.
- Mix the flour, caster sugar, baking powder and cheese and make a well in the middle
- Mix the eggs and milk
- Pour this into the well of dry ingredients and mix
- Add the bacon mix to this and bake at 180 degrees for 20 min.
- Grate some extra cheese on top of the muffin before baking
